Nino

NINO creates non-alcoholic sparkling teas crafted from scratch in Switzerland. The project was born from a simple frustration: not finding a satisfying non-alcoholic alternative for moments usually reserved for wine or sparkling wine. Rather than replicating sweetness or removing alcohol from wine, NINO set out to build something new.

The first experiments grew out of a background in craft beer brewing, where techniques for fermentation, balance, and ingredient pairing laid the foundation. What followed was a long period of trial and error, tasting, and feedback, working closely with sommeliers to understand what gives sparkling wine its character: structure, dryness, aroma, and mouthfeel.

Each NINO blend is composed of premium teas, fruit juices, herbs, spices, and botanical distillates. Instead of de-alcoholisation, NINO reconstructs the elements that make a great sparkling wine enjoyable. Tea provides structure and gentle tannins, fruit brings freshness, verjus adds wine-like acidity, and botanical hydrolates contribute aromatic depth and texture. The result is a dry, layered drink designed to be food-friendly and savoured slowly.

We chose to work with NINO because truly refined non-alcoholic drinks remain rare. Charly is intentionally dry, elegant, and restrained. It combines jasmine, elderflower, and ripe quince, lifted by fine bubbles and a subtle, surprising mouthfeel. The use of hydrolates brings aromatic precision and texture, giving the drink a real presence on the palate. With zero alcohol and no added sugar, it pairs naturally with food or can be enjoyed on its own.
